INTRODUCTION/OBJECTIVES We explain the objectives of the Food Handler Course.
2. ALTERATION AND CONTAMINATION OF FOOD In this section we will classify food according to their consumption conditions: Harmless, Harmful, Perishable, Altered, Contaminated and Adulterated.
3. FACTORS FAVOURING THE GROWTH OF MICRO-ORGANISMS Definition and typologies of micro-organisms Factors favouring the growth and reproduction of micro-organisms High and low risk foods for contamination by micro-organisms.
4. FOOD-BORNE DISEASES Foodborne diseases (FBD) are those known as foodborne infections and food poisoning, caused by agents that enter the body using food as a vehicle.
5. FOOD PRESERVATION AND STORAGE Food preservation is a set of procedures and resources to prepare and package food products in order to store and consume them for a long time and to prevent the action of contaminating agents that may contaminate them and alter their original characteristics (smell, taste, appearance). Different methods are generally used for the preservation of foodstuffs.
6. HYGIENE OF THE FOOD HANDLER Good hygiene habits help to prevent food-borne diseases. Some measures to be taken into account as a food handler are listed below.
7. CLEANLINESS AND HYGIENE Establishing good hygiene and food handling rules and practices will greatly reduce the growth of germs and contamination of food, and thus prevent foodborne illness.
8. PEST CONTROL When we talk about food handling, we call pests those animals that, in contact with food, cause its alteration or contamination, or that are simply annoying.
9. THE APPCC SELF-MONITORING SYSTEM AND REGULATIONS When implementing a HACCP system, it must be taken into account that support plans must be defined beforehand. These help to apply preventive measures for risks that are more easily avoidable through the implementation of corrective hygiene measures. In this way there will be a better control of the general hazards.
10. FOOD INFORMATION LAW (Allergens) Most people can eat a wide variety of foods without problems. Is the food handler's licence valid if we are inspected at our workplace? The answer is yes.
